The origin of the Shiraz variety, also known as Syrah, is in the
vineyards of the Upper Galilee and the south of the Golan Heights.
The Upper Galilee region is characterized by a cool climate, low
humidity and large temperature differences in the summer months.
The southern region of the Golan Heights is characterized during
the grape ripening period by sunny days with a heavy heat load and
cool and dry nights. These conditions allow for long ripening and a
good development of color components and the aroma and flavor
substances in the grape.
