What characterizes this wine is the wooden barrel in which the wine
is aged after fermentation. The barrel gives the wine several
properties - first: the wine in a wooden barrel is exposed to more
oxygen than in a stainless steel barrel, which gives the wine more
caramelized flavors of baked apple and hazelnuts. Second, the wood
adds very dominant aromas of vanilla, cinnamon, clove and coconut.
Also, usually while aging in barrels, the wine undergoes a second
fermentation called malolactic fermentation, which turns the malic
acid (which gives the wine a taste of ripe and fresh fruit and adds
acidity) to lactic acid (from lactose, which gives the wine a more
buttery and milky taste).
